This History
Have you ever wonder what does the word "Katsudon" mean?
It is a combination of two different Japanese words. The word "Katsu" is from "Tonkatsu" which means pork cutlet. Whereas "Don" is from "Donburi" which means a large bowl.
"Katsu" also means to win in Japanese. Katsudon was created by a Japanese High School Student in the year 1920. It has become a dish traditionally eaten by students before school examinations or sporting events.
You must be thinking how Katsu was created? In late 1800, a Japanese chef wanted to offer a European-style meat cutlet; hence he made Katsu. Before this, it was quite uncommon for them to deep-fried their food but the Emperor wanted to infuse western elements into the Japanese lifestyle and encouraged his people to incorporate deep-frying into their lifestyle.
The Recipe
Here we are creating the Vegan version of Katsudon. It is much simpler than expected. The Katsu was only made with one main ingredient, King Trumpet Mushroom!!🍄 Find it hard to believe?
To prepare the vegan "chicken", you will need the ingredients below.
4 large King Trumpet Mushroom
Marinated with:-
1 teaspoon of black pepper
1 tablespoon of soy sauce
Pinch of cumin powder
Pinch of cayenne pepper.
This is the most crucial step, do not miss anything here!
You will need to prepare three separate plates for the ingredients below.
Plate No.1
For the batter. You will need the ingredients below. Take note of the flour to water ratio. The weight of the ingredients is not important.
100 gram of plain flours
150 ml of water
Plate No.2
For the breading, prepare below.
250g of plain flour
2 teaspoon of baking powder
1/4 teaspoon of baking soda
Pinch of salt
Plate No.3
Lastly, prepare the flour mixture below.
150g of plain flour
2 teaspoon of corn starch
The Steps
Step 1: Preheat the oil to 180 Celcius (just enough to cover the coated "chicken")
Step 2: Coat the "Chicken" with the flour mixture (Plate number 3)
Step 3: Dip it into the batter. (Plate number 1)
Step 4: Coat with breading flour (Plate Number 2)
Step 5: Fry for about 4 minutes and flip them once.
Step 6: Transfer it to an oil draining rack or onto a kitchen paper to remove the excess oil.
Step 7: Your Fried Vegan Chicken is ready to be served!
Now it is time to make the sauce for Katsudon.
There are a lot fo different way of making the sauce, i invented my own way.
Firstly, add the miso paste, some water, a pinch of sugar, soy sauce and a bit of oil into a pot and stir well. Bring it to simmer and add your breaded "fried chicken" on top of it.
In another bowl, lightly beat 2 eggs. Pour the egg around the "chicken" and a bit on top. Turn off the heat immediately. Pour it onto the rice when the egg is just set. Voilà! It's ready to serve! 😋
