Vegan Lotus Root Soup [素肉莲藕花生汤]

This dish is a well-known Chinese home-cooked soup that is simple, comforting and delicious.


It is usually boiled with lean meat from a pig. This vegan recipe will show you how this can turn into a vegan option while still delicious. Yes, no pig is killed in this recipe.

The key ingredient in any soup always starts with stock. Since we are not using any vegetable stocks, you might want to note the raw ingredients that we used.

This recipe can serve up to 5 adults. You can store it overnight in the fridge and heat up the next day too!



The Recipe

Key ingredients for stocks:

  • 450g Lotus Root (washed, peeled, and sliced into 1cm thick slices lengthwise)

  • Half cup raw peanuts, skin on (soak overnight with room temperature water)

  • A cup of vegetarian meat (made of mushrooms stem)

On the other hand, prepare the ingredients below:

  • 2.5 litres of water

  • 2 carrots, cut into bite-size

  • 6 shiitake mushrooms

  • 5 slices of ginger

Boiling the soup

1) If you have a Pressure Cooker. You may follow the recipe below.

Put all ingredients into the pressure cooker and fill with water and close the lid. Remember to turn the valve to seal and select pressure, HI. Set for 2 minutes and natural release.


Alternatively, if you do not have a Pressure Cooker. You can opt for stovetop cooking. Using a pot, bringing all the ingredients with water to boil and followed by two gentle simmer hours. Do not cover the pot fully with a lid. Please remember to check the water level from time to time.


2) Drizzle some toasted sesame oil, white pepper, black pepper and salt to taste.

Note: This soup can also be made nut-free if you have a nut-allergy. You can add 2 tablespoons dried goji berries and 8-12 dried red dates instead to increase its flavours.
